Fresh dates

Delicious plain

– also great for cakes, salads etc

 

Date cake

350 g pitted dates

50 g blanched almonds

250 g sugar

½ tsp vanilla sugar

35 g margarine

3 dl boiling water

2 eggs

400 g flour

2 tsp baking soda

Pour boiling water over dates, almonds, sugar, vanilla sugar and margarine.

Beat eggs slightly and combine with the slightly cooled date mixture.

Add flour and baking soda and combine.

Pour batter into a greased cake pan (1.5 l).

Bake for approx. 1 hour at medium heat (175º C).

The cake can be eaten as it, but tastes best spread with butter.
